Hi all. I am coming across so many good recipes that I can't just keep them to myself anymore. This post I will be sharing several...keep coming back for more. Many of the recipes I use have been adapted from BariatricEating.com and Obesityhelp.com.
Todays recipes are:
Holiday Roasted Garlic Mashed White Beans
(a great complex carb with fiber and protein)
1 bulb garlic top cut off about 1/4 inch so garlic meat is exposed
1 sprig fresh rosemary (remove leaves and chop)
3 TBLS Olive oil
Wrap in foil top bulb with rosemary,drizzle with 1T or 2T olive oil and roast in oven until soft and golden.
2 14 oz cans of Cannellini beans (must drain and rinse them well)
1 or 2 TBLS Veggie Stock or Chicken Stock
1 TBLS of GOOD fresh grated Parm Cheese
Salt and pepper to taste
Once garlic and rosemary are soft and easy to squish out of skin, remove enough to your taste. Warm on medium low scant amount of olive oil in large saute pan and drop rosemary garlic mixture into pan Add beans to warm pan with garlic and rosemary smashing beans and mixing all together. Add stock to desired consistency. Removefrom heat and add in parm cheese,salt and pepper to taste. Put in an elegant serving bowl and drizzle with a little olive oil. Be sure to serve this HOT!
Makes approx 4 large servings or 6 small.

Amazing Chopped Salsa Salad
3 large tomatoes (seed and dice)
1 English Cucumber
1 Red Onion
Small Bunch Fresh Basil
1/2 cup Fresh Mozzarella balls ( the little ones: Perlini)
1 jar Marinated artichoke hearts (reserve some liquid)
2 Tbls Olive Oil
2 Tbls White Balsamic Vinegar
Salt and Pepper to taste
Chop Basil and all veggies including Artichoke hearts and combine in a bowl. Add a little salt and pepper as they sit. Add cheese. In separate bowl combine together 2 Tbls olive oil, 2 Tbls white balsamic vinegar, 1-2 Tbls reserved artichoke heart liquid, and salt and pepper to taste. Top with sprigs of fresh flat leaf parsley.
This is great on top of chicken,fish or grilled burgers. You could even add some briny olives if you like.
